Christmas Pudding Recipe
Chef Taiaha's Grandma's Christmas Pudding
Some dishes hold a special place in our hearts and sometimes, they inspire something entirely new. This season, celebrate with a sweet festive recipe from Harry's Deli - Chef Taiaha's take on his Grandma's Christmas Pudding.
Serves 10-12 people
Prep time 15 minutes, plus resting overnight | Cooking time 5 hours
Ingredients
250g sultanas
250g raisins
100g currants
100g dates
1 carrot – finely diced
2 oranges (rind and juice)
1 lemon (rind and juice)
1/2 cup of brandy
250g butter
250g brown sugar
2 tbsp of golden syrup
4 eggs
250g plain flour
1 tsp cinnamon
1 tsp bi-carb soda
1 tsp salt
60g breadcrumbs
250g raisins

1/2 cup of brandy
250g butter
250g brown sugar
2 tbsp of golden syrup
4 eggs
250g plain flour
1 tsp cinnamon
1 tsp bi-carb soda
1 tsp salt
60g breadcrumbs
Method
1. Cut dried fruit and put in saucepan with carrot, juice, rind and brandy.
2. Heat on the stove top until it steams, then cover and leave overnight.
3. Cream the butter, sugar and golden syrup and then beat in eggs.
4. Add the breadcrumbs, flour, fruit/brandy mixture, cinnamon, bi-carb soda and salt.
5. Put into a greased pudding bowl (or a deep silver metal bowl) with greaseproof paper and foil on top. Tie with string and create a handle. See tip below for how to wrap up and prep the perfect pudding for steaming.
6. Steam for 5 hours with a lid.
7. Unmould the pudding on a warm plate by flipping it out of its basin and tapping gently to release.
8. Serve while warm. A dollop of gently whipped cream or vanilla ice cream is a simple, delicious pairing.
