Salmon with Kimchi Recipe
Crispy-Skinned Atlantic Salmon with Fresh Kimchi & Chive Ranch

Ingredients
Salmon
2 Atlantic salmon fillets, skin on
Salt & pepper
1–2 tbsp neutral oil
(grapeseed, canola, or rice bran)
Fresh Kimchi
2 cups Chinese cabbage,
chopped
1 small apple, grated
1–2 tsp lime juice
1–2 tsp gochujang
(Korean fermented chili paste)
Pinch of salt
Chive Ranch
½ cup mayonnaise
1 tbsp lemon juice
2 tbsp finely chopped chives
1 tbsp chopped parsley (optional)
1–2 tsp white vinegar
or buttermilk (to thin)
Salt & pepper
Garnish
½ cup julienned cucumber
Method
1. Fresh Kimchi
Mix cabbage, grated apple, lime juice, gochujang, and salt.
Set aside to marinate.
2. Chive Ranch
Combine mayo, lemon juice, chives, parsley, and
vinegar/buttermilk. Season to taste.
3. Salmon
Pat salmon skin dry and season. Cook skin-side down 5–7
minutes, flip and cook 1–2 minutes more.
4. Serve
Apply the chive ranch generously to the plate, add the kimchi
and salmon, garnish with cucumber or edible flowers.
